How to make Mascarpone Cheese | Keto Essentials | Headbanger’s Kitchen

Horns up and welcome to a brand new episode
of Headbanger’s Kitchen: Keto Essentials, the show where I show you where to make some
essential items that we use in our keto recipes. Now today I’m going to be showing you how
to make a mascarpone cheese, which is an Italian cheese. In fact, I don’t know, is that how you pronounce
it? Some people say mascar-pone, some say mas-car-po-nay,
I don’t know, whatever it is. Anyway, it’s time to make that delicious mascarpone
cheese. Add a litre of heavy cream to a large, thick-bottomed
saucepan. Place over a medium heat and slowly bring
it up to a simmer. Keep stirring it occasionally so it doesn’t
scorch at the bottom. Once you start to see bubbles appearing, you
know the cream has reached the right temperature and if you have a thermometer you’re looking
at a 180 degrees fahrenheit. Once this happens, you stir in the juice of
a whole lemon or one lime, if you live in India like me and stir it continuously until
the cream thickens. It should leave a ribbon on the surface when
you lift the spoon, just like that. Place a strainer over a bowl and line the
strainer with four layers of cheesecloth. You can also use any other thin muslin cloth
to strain this. Pour in your cream, cover it and leave to
drain for eight hours or overnight in the fridge. The next day, discard the whey and store the
cheese in an airtight container in the refrigerator. And that’s it, our mascarpone cheese is ready,
and that looks creamy and dee-licious; I can’t wait to use it in a recipe. And, our mascarpone cheese is ready. I’m not gonna taste it because i’ve got some
special plans with this cheese and you’ll find out soon enough. This will easily last for about two weeks
in the refrigerator and this is delicious in a lot of recipes. If you guys have any ideas on how I can use

  2. This is a bedtime dessert I have often.

    4oz marscapone
    1 tablespoon 100% cacao
    2 tablespoons heave cream
    2 packets of stevia

    Place ingredients in bowl and mix with a fork until it reaches a mousse consistency.

    Take a spoon and enjoy.

  3. Mixed with garlic and used as the sauce on a Fat Head Pizza.

    In a cauliflower and cheese casserole.

    In a savoury cheesecake (bacon/onion/mushroom/cheddar or ham,/green pepper/onion/swiss or shrimp/crab/horseradish/dill/capers or chicken/tomato/onion/garam masala).

  4. Sweetened and flavored with vanilla for me, lemon for others in zuc or cauli crepes, sweetened and flavored with vanilla for me, lemon for others, in fathead dough pastry. Use to stuff sweet peppers, hot peppers, use in skillet lasagna. Make seed and/or nut flour bagels, flavor with minced onion, green (spring) onion, roasted garlic, sauteed garlic and spread on bagels. Stuffed meatballs. Mixed with roast veg, bacon, savory spices, hot sauce, and then put on cauli bread and toast like a grilled cheese or during hot weather, use cloud bread.

    I cannot eat cow dairy because I'm intolerant but I can eat ewe or goat and now I can make my own ewe mascaprone as I'm lucky enough to be able to find some ewe cream 😀

  8. I love all of your recipes! At some point, you should make an update video about your results on keto! I think a lot of viewers are interested about how it's going for you. A tip you may or may not know: people react very differently to dairy, some are totally fine, but others will get knocked out of ketosis from the lactose. If your results seem to plateau, try eliminating dairy for a few weeks. Anyways, can't wait to make my own cheese!

  12. I made this today and it is delicious. The cheese just melts in your mouth. I had it with a boiled egg for dinner, I took one tbs of the cheese, a little hot sauce, rosemary, crushed black pepper and a little lemon juice and heated in the microwave for 20 secs, it was seriously very delicious and I have so much left. A question though in MFP what is 1 serving of the cheese, is it 1 tsp or 1 tbs? Thanks a ton for making keto more delicious and specially in India. 🙂

  14. I made Tiramisu using Marscapone as a frosting. Just added some coco flakes, vanilla, and espresso to it then mixed it up, it was realllly delicious.

  17. Sorry mate, but mascarpone should not curdle like ricotta. It should be thick and smooth.

    To get a good mascarpone, first up you should use a double boiler so you don't scald the cream;
    Bring it to under boiling-point ~ circa 87-90°C, and no more (use a cooking thermometer)
    Add the citric acid (or lemon or lime juice) and heat for 10 mins on low heat (don't go above 90°C);
    Remove from heat and allow to cool before pouring it into your cheese-cloth.

    Also, you should hang the developing cheese for at least another 24 hrs in the fridge to develop properly (after it's finished dripping whey, which should take the 8-to-10 hours you suggested; then you want the 24 hrs minimum developing time, still in it's cloth) — you'll get a much richer-flavoured, smoother mascarpone that way.

    Good mascarpone is easy, but you can't rush the time.

  19. weird. here in canada mascarpone cheese is soooooo expensive. for a 500g container its $15-$17 dollars (and canadian money is worth less than US dollars by about 25%). a 500 ml of whipping cream is about $5.00 – im thinking i should make it myself to save money!!!

  28. I think this is wrong. You got something like ricotta, Mascarpone should be creamy and thick. I think your temperature is higher then it should be.

  29. 50 g mascarpone cheese
    1 heaped tbsp chosen sweetener
    1 level tsp cinnamon powder / mix all well.
    Pipe or spoon over your pancakes (almond or coconut 😂) and enjoy
